Transferring apps but not photos
I want to transfer my applications and application data but not all my photos and videos. Can I do that? Thanks

Are you using iCloud Photos? If yes, restore from the latest iCloud backup, which does not contain your photos and videos synced with iCloud Photos.
If iCloud Photos is not enabled on you device in the settings for iCloud, those photos and videos will not be synced back to your iPhone.
Since iCloud Photos does not work as a backup for your photos, archiving your data by transferring it to your computer would be an option:

In case you don't use iCloud Photos, your backup made by your computer does contain the photos and videos, which will be restored from the backup, along with all the other information:
