No, you can't. When you buy Apple Watch Ultra, you are ONLY offered the choice of Trail Loop, Alpine Loop or Ocean Band. You can get one of those three bands and if you really want a Milanese Loop, you can buy it separately. You'll then have two bands you can wear on your watch. So not a bad thing.
