I deleted Workout on my Apple Watch. How do I get it back?

I am surprised you were able to delete it. Perhaps you just removed it from the dock. See the 'Add your favorite apps' section in:

The first (and simplest) thing to try if something isn’t working right is to restart your Apple Watch and its paired iPhone. If necessary (device not responding), try a forced restart. Both methods can be found here:

If that doesn't help, the next steps would be to unpair and pair your watch again and restore from the backup just created. This should result in no loss of data. It deletes all temp and corrupted files and re-indexes the file system.

Javaliga, I was amazed. I was walking to exercise and tried to set "outdoor walk" on my watch, stupidly trying to walk and operate the app, but something came up and I chose it, and from that point forward I didn't have any workouts recorded, swimming, functional strength, walking. I tried getting it back via the Dock, but I couldn't, nor did restarting help, but once I unpaired/paired it was good again. Thanks!
