Generally quite safe, yes.

Who is your adversary?

If a national security agency or ilk is interested in you, copied data is near the least of your risks.

A not-rich ex that wants to be a problem? The barista at a coffee shop running a Wi-Fi network? Far less of an issue, assuming you’ve kept your credentials and your hardware private.

As for ”hacks”, those are still quite rare and targeted, and don’t usually include any obvious indications of compromise. Whether you are targeted depends a great deal on your situation (investigative journalist, dissident, peeved a government or somebody really rich, or you’re a senior government or private individual or someone with access to great wealth, etc), and how big your likely adversary’s budget is. Tools here are expensive.

As for the rest of us, network transfers are securely encrypted. The only folks that can access cut-and-paste (Handoff) or AirDrop and such are those with access to your Apple ID, or to your device, or that can break TLS network security.

As long as it is on your home network / out of range of others you are safe. If you do it at Starbucks, someone could use a sniffer to get your data. I don't know if it is encrypted.
