If your old iPhone is broken and you cannot transfer your eSIM from it to your new iPhone, you must contact your carrier. They can send you a new eSIM QR Code that you scan with your new iPhone. Some carriers also offer to see the QR code for their eSIM on your personal page, on their web page.
When your carrier has sent the QR code to your eSIM, go here on your new iPhone:
Settings → Carrier → Add eSIM → Scan the QR code, enter if necessary The PIN code, you are also connected and can make calls and use Cellular Data.
