Caller ID is a carrier feature. Some carriers support controlling the display of your number using Settings>Phone>Show My Caller ID. some do not. If yours does not, contact them for information on how to control this.

Note that caller ID information can not be hidden when calling toll free numbers, law enforcement, etc.
