I bought the Macbook Pro M2 in Europe (220V). Is it possible to change the Euro plug with a US plug without experiencing any negative surprises?

Yes. You can slide out the European duck head and slide in a U.S. duck head just fine. Apple power adapters are universal and support voltages from 110 to 240v.
