The converter or the splitter? I wouldn't worry about a splitter being an issue. Worst case would be it doesn't work. I've got the Apple USB-C to headphone adapter as well as an aftermarket version. Both work reasonably well. USB-C has a standard for audio conversion, and mine isn't specifically marketed as designed for Apple devices. A splitter would just connect two headphones to the same analog audio output. As long as they're not a difficult load (like trying to drive two pairs of mini passive speakers), it should be fine.

I'd personally recommend just a splitter and Apple's USB-C to headphone adapter. The only problem is that many of these don't necessarily have controls for volume level, so it might not be ideal if two different types of headphones are used or if two users want different sound levels with the same headphone type. But if it's just for something going to a headphone or device with a volume control, that shouldn't be too bad. The one from Monoprice is pretty well priced. Direct, the shipping is pretty high (maybe there's free shipping with fairly high minimum purchase?), but they also sell through Amazon where there can be free shipping with Prime or a $25 purchase.
