Hello Mendizzle,

Depending on how you had your notes stored will determine the possible ways of recovering them.

If you had your notes stored in iCloud, you may be able to recover them with these steps:

1. In Notes on iCloud.com, select Recently Deleted in the folder list on the left.
If you don’t see Recently Deleted, you don’t have any notes in that folder, and there’s nothing to be recovered.
2. Select a note, then click Recover in the Notes toolbar.
The note moves to the Notes folder.
If you want to move a recovered note directly to a folder you created, drag the note from the Recently Deleted folder to another folder.

Delete and recover notes on iCloud.com

If you had your notes stored to a 3rd party email account, you'll want to check with your email provider on possible ways to recover them.

If you just had the notes stored directly on the device, you may be able to recover them if you have a backup that was done while they were still on the device. So for example, if your last backup was last night and then this morning you deleted the notes, they would be contained in that backup and you can restore it to get them back.

You can check your last backup time in Settings > name at the top > iCloud > iCloud Backup. If you do have a backup that was done while the notes were still on the device, you can then restore it to the device to get them back. Keep in mind when you restore a backup, it will restore the device back to exactly as it was at that time. Anything that's changed on the device from the time of that backup until now will be lost. (settings changed, messages sent/received, pictures taken, call log, etc)

Restore your iPhone, iPad, or iPod touch from a backup

Cheers!
