How can I see the recent conversation the emojis was sent in like is there a way to see the taps on my keyboard to see what was typed or sent?

There is no keyboard-recording mechanism in any of the standard keyboards and configurations. Closest available here is the frequently-used Emoji list, available in the Emoji picker. The other option for reviewing a conversation is in the app, as some apps such as Apple Messages maintain the conversation until and unless that is deleted. Or you ask the recipient for their copy of the chat, if the copy has been deleted.
