You can not do that. Emojis update with iOS, so if there are new emojis built into a newer iOS version, they will be installed there. If you have iOS 14 on your iPhone, you can update to iOS 15.7.4.

Remember to connect to Wi-Fi and a charger. Your iPhone must have more than 50% power to update without a charger connected.
