I'm getting new emails, but suddenly all my previous emails in my Inboxes (iCloud, Gmail & Microsoft emails) have been deleted (nothing in Trash folders). It's the same regardless of which device I login from (iPhone, iMac, MacBook Pro). I've also logged in via a browser. I restored a phone backup, but still nothing. Software is all up-to-date. Anyone else having this issue?

As there are no viruses currently that affect a Mac, that seems unlikely. Yes, there are other sorts of malware but, again, not the most likely thing.
Starting from now, does the email remain in the Inbox? In other words, is the problem ongoing?
For Gmail, have you looked in the "All Mail" folder (you may need to go throw a browser to see that properly)? I use Gmail, almost exclusively through the web and routinely clear my Inbox (okay, not as often as I should). Mail I want to keep gets "Archived". It resides in the "All Mail" folder which I generally have somewhat hidden.

If your emails are not appearing across any device it is likely that they have been deleted. This is especially true if you log into each specific service and are still unable to locate any information. To clarify, you signed in to each of your accounts using a web browser on your computer and the inboxes for all of your accounts are empty?
While your iOS backups do not include emails, if you have a Time Machine backup of your Mac, you could possibly use the steps in this link to Restore items backed up with Time Machine on Mac.

For Gmail and Microsoft, I'd try logging in through their web interfaces and see if the email is there.
Hi! Yes, that’s correct. Amazingly none of my historical emails across multiple accounts (including non-Apple accounts) appear regardless of the device I login.

Thank you, ryane77 and IdrisSeabright. Yes, I've tried logging in directly via web browser to the non-Apple emails as well and sadly the historical emails are not there. I'm strongly thinking virus of some sort at this point, because all my email accounts experienced this at the same time.
I will try the one last option of restoring via Time Machine from my Mac and see what happens.
