The first time your new watch is paired to your iPhone using your Apple ID the warranty coverage starts. That can be seen in iPhone, Watch app, My Watch tab, General, About - under Limited Warranty it will show a date 1 year on from the activation date. The Watch is also activation locked to your Apple ID while it is signed in - look in the Find My app on the iPhone.
