When Updating the operating system from Catalina to Ventura is there a list somewhere of unsupported apps that I should Uninstall first to avoid problems? Or a series of steps to follow for a smooth transition. I'm asking because of comments made about apps with BIG Big Sur update which I should've done!

You can use Go64 to list the 32bit apps that will no longer run and can be removed.
This is a website RoaringApps where you have to manually input the names of each Third Party Applications by name
It will provide some Insights but not a definitive answer

with update to catalina from earlier older 32bit apps stopped working, but other than that there is no way to list apps which may not work between versions, if apple fix an issue which some third party relied on as a "feature" will mean the app stop working is not really something one can track or list
