Does itunes still backup and restore iphone? Since itunes has been stripped of the majority of its capabilities it seems it no longer can see my iphone so backups and restores are no longer possible, Apple has taken all of our control away from us, I dislike them more and more.

Yes. Further, your iTunes can only put back media onto the iPod what is in your iTunes Library. You would need to sign into the App store and download the apps again.
