How to update iOS 15

iPhone 8 Plus, iOS 14
You cannot update your iPhone 8 Plus to iOS 15. You must update to the latest available version for your iPhone which is iOS 16.4.1 now. If you're on iOS 14 now, you'll need to update from a PC with iTunes, or a Mac, as it's not possible to skip an entire version when updating directly from your iPhone's settings.
