I’ve had my phone for over a year and it still does not remember my last name. I have to type it in every single time. My phone remembers my first name but it won’t remember my email either.

Check all the various entries at Settings > Safari > AutoFill.
We have absolutely no idea about the context which frames your question.
Here are just a few examples:
Anytime I’m trying to text or fill out a form on my phone, I can swipe my name and it recognizes the first name, but will not recognize my last name. I have to manually type each litter every single time I want to put my last name somewhere it doesn’t remember my email address, nor does it remember my phone number. How can I get my phone to retain all that information?
