I changed my Apple ID on my iPad, but why does my old email still show under my name?

Seems likely the changes haven't taken effect everywhere yet. You may need to restart your iPad: (How to: Restart your iPad - Apple Support)

and also to then allow 24 hours for the updated email address to show up.

If necessary, you can go to your Apple ID Account online, and check (or update) your details there:
