First choose Column Layout from the view menu, then right click in the area of the column labels and select "From".

I thought I was going crazy. Turns out there is an option under View called "Use Column Layout" which, when checked, gives you two columns—Subject and Date. That's it. No way to add a column. When you uncheck it, you get the sender's name in bold type, the subject, the first line of text and the date. Why would anyone want to "Use Column Layout"?
