Why are some conversations in blue, and why are some conversations in green, and why are some conversations in gray?

In messenger, why are some of my conversations in blue, and why are some in green, and why are some in gray. What does all this mean and what does it indicate by the other users phone.

Blue means a message you are sending to another iPhone via iMessage. Green means a message you are sending to either a non-iPhone or to an iPhone that has iMessage turned off; the message uses your carrier’s SMS/MMS message service. Grey is an incoming message from either iMessage or SMS/MMS.
