We'll be glad to help you out. We see you came from Use Notes on your iPhone, iPad, and iPod touch. If you're using iCloud for your notes, then everything would remain on iCloud as outlined in Set up iCloud for Notes on all your devices - Apple Support. Those would be restored to your device upon downloading the Notes app again.
