Is there a way to get podcasts on Apple Music to remember if I haven’t listened through the whole episod?
other podcasts do this, but not Apples. Find it really annoying.

If Podcasts is not working as expected, start by ensuring that your iOS is fully up-to-date:
"Update iPhone manually
At any time, you can check for and install software updates.
Go to Settings
> General > Software Update.
The screen shows the currently installed version of iOS and whether an update is available.
To turn off automatic updates, go to Settings > General > Software Update > Automatic Updates." Update iOS on iPhone
Should the issue continue, contact Apple Support directly. They will be in the best position to support you.

My IOS is up to date.
But I think that my problem stems from the fact that the podcasts I’m listening to are music podcasts that are placed in the Apple Music app, under ”Radio”.
Could be that Apple makes a distinction when there is music involved. But nevertheless, I still think it would be of value for the listener to be abel to make a paus in a two hour podcast, maybe for the next day, and then being able to connect from the place where I stopped from the day before.

If they’re being played in Apple Music, these are not considered a podcast. These are considered radio shows, and there is no way that a live show can be paused.
Depending on what you’re listening to, you may be able to listen to one of these stations and pause the feed if they provide previously aired shows: Listen to the radio in the Apple Music app - Apple Support
