How do I stop share members from using my credit card when making a purchase

If you go to the family tab on an Apple device and you go to purchase sharing, it should show, Shared payment methods you should be able to toggle off your card.

You can ask them to add store credit to their accounts which can be used ahead of the family organizer's payment method, however if they don't then your card will be charged. Your only alternative is to turn off purchase sharing.
