iPhone 11 text when hearing talking

You did turn it on. There is a mic icon at the right end of the text message window, and you probably hit it accidentally. This turns on dictation for the message you are composing.

Turn VoiceOver on or off

1. Activate Siri and say “Turn on VoiceOver” or “Turn off VoiceOver.”
2. If you've set up Accessibility Shortcut, triple-click the side button or Home button (depending on your iPhone model).
3. Use Control Center.
4. Go to Settings > Accessibility > VoiceOver, then turn the setting on or off.

The icon does not change when it is on.
