I would like to know how I can check the amount of data my application has stored on my device, as well as how to completely uninstall the app.

Some here may disagree (And some not) but the FREE app called AppCleaner will show you exactly how much disk space an app is using plus show you how much disk space all its companion files are using as well.

One caveat about using this though is that sometimes it will list companion files that other apps may need to work correctly. So if you remove everything it shows, it might break something else. Example: Adobe products. If you select adobe photo shop and remove it all, you might break other adobe software you don't want removed. You just need to be watchful about what it is removing. Other than that it works great.

The storage information in the general system settings will show you how much the app itself plus its configuration data plus any data you’ve created with the app.

If the app has templates or other configuration data, it is likely stored in the application support folder inside one of the library folders your data that you created is stored wherever you stored it.

Any data you created will be stored wherever you stored it.

if the app required an installer, you need to use the apps uninstall are provided by the developer. Any other app can just be drag to the trash, but you will still have to delete your data and any application support data.

Unless it’s some app that requires a lot of video or image templates, or game, save data, the data stored in the application support will be minimal

I agree with you about AppCleaner. However, there is a warning a user should be aware of:

WARNING: If you use AppCleaner on an app that you have other apps from the same developer, like Adobe, you must be extremely careful checking all checkboxes and deleting.  Some for those files may support other apps from the same developer and deleting them can mess them up.  Adobe apps is a primary example. I know from experience.😢  For singular apps from a developer it's safe.
