If I’m not apart of a group chat … why is a join button on my screen in my iMessage with some one I was messaging earlier?

If you mean the  Camera icon, that's not a Join Facetime button, that's a start Facetime icon. You can at any time start a FaceTime call with the person you are messaging. It does not need to be a group message or have multiple people involved. It can be a one to one FaceTime call.

The only time you should see an actual button with the word "Join", is when someone starts a FaceTime call, and would like you to Join it.
