Unopened emails under "mailbox" used to be displayed in bold text before opening but in Monterey. can that be reset?
open Mail > Mail Menu > Preferences > Viewing > check box for Display unread messages with bold font.

What Font do you have selected in the preferences for "Message list font"?
If this is a font that is already in boldface, like "Arial Rounded MT Bold", then all messages appear in bold.
In that case, switch to a different font.
Oh... and this only works if you are using Column Layout (View->Use Column Layout).
