My activity rings are full but then all that activity is wiped as if it is resetting but it is not the end of the day. Why does it keep doing that? Could it be that we are all under one Apple ID account

Apple IDs are not meant to be shared amongst users. Everyone should have their own unique Apple ID. A single user can have (in fact, should) the same Apple ID on all his devices. If there is information you want o share, use Family Sharing instead:
