Hello!
To move your phone number to a different device, you can take the SIM card out of your iPhone 8 and move it to your iPhone 11. You won't have to worry about eSIM as that is in iPhone 14 and (I'm assuming) the newer models to come.
NOTE: Moving the SIM from an iPhone 8 to an 11 may not be compatible, you can test it to see. PLEASE, do NOT use the old SIM tray in your iPhone 8 on your 11, as that will not work. The guide below specifically states that.
