There is not a good way to make an iPhone simple.
iPhone is very capable, and is also correspondingly quite complex in various ways.
Given enough time and effort, using Focus might serve as a basis for a simpler iPhone. But that’s still a project.
If an iPhone is too complex and with no judgements intended, consider acquiring a feature phone from your carrier.
