Most hard disk drives (hdd) and solid state drives (ssd) are compatible with the Mac and macOS. The only thing that need be done to use them is to ensure that the drive is properly formatted for use with macOS. Some will come pre-formatted for use with macOS, others for Windows. Even those formatted for Windows use can be reformatted.
The Disk Utility app that is included with the OS is used to accomplish this, if necessary.

If the old iMac is not running macOS Mojave 10.14 or later, then the format required for the external drive will be Mac OS Extended (Journaled) as the newer APFS format will not be recognized by an earlier OS.
The new iMac can also use that format for the external drive.
