New emoji’s not showing on Watch

I updated my phone to get the new emojis (🩷🫨🪻🩵) but they’re showing up as the boxed question mark on my watch (I have them in a contact name). My watch says it’s up to date though so I’m not sure how to get them to show

OK. It may be up to date, but in terms of WatchOS, is it isn't capable of running the newest WatchOS version. I don't know if that is why you may not have the emoji's, but I suspect it is. The newer watches updated to WatchOS 9.4 at the same time the new emoji's were released.

I'd recommend you contact Apple Support for a definitive answer, but I'm going to guess since you have an older watch, which can't run the newer WatchOS versions, may be the reason you're not getting the new emoji's on your watch.
