Wide Spectrum is a feature of device microphones that transmits a full range of sound frequencies, ideally providing richer sound than "standard" or "voice isolation."
Ultra Wideband is a specific band of frequencies used by 5G cell phones and has nothing to do with this question.
To use Wide Spectrum you need (1) a compatible device, and (2) a connection that supports the higher data bandwidth needed to transmit the wide spectrum audio. You can use Wide Spectrum on FaceTime audio and video calls and maybe some other 3rd party software (not Zoom though). You cannot use Wide Spectrum on a standard phone call.
