No icon for trash appears to make it easy to delete messages. Sliding gives option of Archive but not Delete.
I am familiar with Mail on a MacBook Air and would like the ipadpro mail app to behave similarly.
Any suggestions would be very welcome.

You are presumably using a third-party email provider, such as Google Mail - where you can choose to either delete or archive messages.
You need to review your email account settings - in particular the handling of deleted messages:
Settings > Mail > Accounts > [Your email account] > [Account] > Advanced
