All of a sudden this morning I have only one Home Screen and no Home Screens are hidden.
How do I get back my other home screens? What did I do? Something changed in settings.

Yes, you can set the Focus modes, including sleep, to show only certain apps and screens. My Work Focus only as one screen and a very limited set of apps in a largely vain attempt to minimize distractions.
