How to create a bootable USB drive for MacOS - High Sierra

I am watching a "How To" article (YouTube) showing how to create a bootable USB drive for MacOS - High Sierra. They indicate that there is a specific "installer" that can be found on the Apple App Store. I am unable to find on that app store. Can you advise if it is available elsewhere?

I can find the installer just fine here: Create a bootable installer for macOS - Apple Support

But given I'm trying to download it on a newer Mac, it won't let me mount it as my newer machine cannot run High Sierra.

My 2010 iMac however will not go into Recovery Mode for love or money. It does have a DVD slot, but of course I've thrown out my disc-based installers years ago. Any ideas?
