I am watching a "How To" article (YouTube) showing how to create a bootable USB drive for MacOS - High Sierra. They indicate that there is a specific "installer" that can be found on the Apple App Store. I am unable to find on that app store. Can you advise if it is available elsewhere?

But given I'm trying to download it on a newer Mac, it won't let me mount it as my newer machine cannot run High Sierra.
My 2010 iMac however will not go into Recovery Mode for love or money. It does have a DVD slot, but of course I've thrown out my disc-based installers years ago. Any ideas?
Thanks for tip but when I go to App Store the radio button for "GET" is greyed out.
FYI am running this on a new iMac (M1) system. (Ventura 13.3.1) but need to get High Sierra to repair an old iMAC (mid 2011) system

See if you can find the original install disks on ebay?
High Sierra is part of a group that will only download onto a machine capable of booting to it (not a M1 Mac).

Have you tried reinstalling High Sierra in the 2011 Mac by booting it into Recovery Mode?
