if i delete the youtube app will all my videos be deleted or can i just sign back in and have eveything be there

There would be no problem. Videos are tied to your account. If you delete the app, you just log into your account from any device and your videos would be there online. If you’ve actually downloaded videos those downloads would be lost if you delete the app but they can always be downloaded again.

If you have a lot of videos downloaded, maybe that’s why it’s taking so much space?

It depends on what YouTube does when you delete the app. I suspect, it only deletes local things and your account is OK. After all, what if you sign in from multiple devices.

Apple should be able to answer this question. Under storage settings, when you click YouTube it gives you the option to offload or delete. If you delete it, it says all data will be erased from device along with the app and the action cannot be undone. This is fine as long when I download and reinstall the app I’ll still be able to sign back into my YouTube account and all my videos are still there. I just want to delete to stored the data on my device to clear some space. Does this erasure only apply to the stored data on the device?

This is a user-to-user forum. Apple doesn't answer anything here (other than some health/safety issues). But, even if they did answer questions here, it's still a YouTube issue.
