When I bought my iPad 10th gen,I was told by the seller that is not good to use a fold for protection due to could damage the screen (sensibility matter)… so how could I protect my iPad when moving along?

A good case for your iPad, with a folio cover, is sensible investment in protecting both the iPad itself - and the screen.
The iPad screen is the most expensive single component of your iPad - and is easily damaged.
There are many third-party cases available for all models of iPad. Depending upon you needs and budget, there are many from which to choose - offering different amounts of protection. Some are very lightweight, while others offer substantial protection from the rough-and-tumble of heavy usage in outdoor environments.
Perhaps consider cases from a well known manufacturer, such as OtterBox, STM, Zagg - although there are many others.

A good case is intended to protect the screen - and protect from (and not cause) damage. As for the “advice” that you received in context of protecting the screen sensitivity for your Apple Pencil, this is nonsense.
If you are looking for a good case for your iPad, if using an Apple Pencil, you would be well advised to choose a case that includes secure storage for the Pencil. In this regard, STM is particularly good in their available choices - although the three manufacturers that I have listed have cases that provide storage for the Pencil.
Thanks Lotuspilot for your fast reply. My doubt about buying these cases/folders comes from that the seller guy in Apple told me that is not a good idea to use them because they damage the screen in terms of sensibility with the Apple Pencil use. Is like that?
