Unpairing broken Apple Watch that does not show up in All Devices on iCloud

To unpair a broken Apple Watch from my iPhone, do I have to use the Apple ID that was used to setup the Apple Watch? (I have an old Apple ID, but can’t remember the password)

Yes, you need to remove it from the iCloud account the watch is tied to. If you don't remember the password to that account see this --> If you forgot your Apple ID password - Apple Support
