My music library on my Mac consists of many specific versions of albums that I've ripped. Ex: Mobile Fidelity gold CD versions. How can I share these versions across iOS devices? Home Sharing only works at home with all devices on the same WiFi network. When I choose Sync Library, my specific versions are replaced on iOS devices by versions of the album that exist on Apple Music, not necessarily the ones in my library.

Your other option would be not to use an Apple Music or iTunes Match subscription and instead sync the physical files from your Mac to your iOS device.
To do that, you’ll turn off Apple Music on both your Mac and iOS device(s).
iOS - Settings > Music
- turn off Show Apple Music
- turn off Sync Library
macOS - Music > Settings > General
- uncheck Sync Library
Then, this article has the syncing options - Sync your iPhone, iPad, or iPod using your computer
For macOS Catalina or later choose ‘Sync with Finder’
For macOS Mojave or earlier choose ‘Sync with iTunes’.
