Using highlighter/pen/eraser on already typed text in “Notes” on Ipad

How do you use a highlighter or pen on text that you’ve already typed into the “Notes” app? this is on my IPad. The highlight function appears and lets me change colors but then it disappears when I go back to the note.

Why can’t I highlight in the notes app? I use the notes app a lot. It is handy, convenient, straightforward. Tell me why I always try to highlight something and the option is not there!!! You’d think apple would have such a basic feature! I’m reconsidering buying another iphone next time I buy a phone. Right now I have Iphone 11.
