iPhone Storage - 256 or 512GB?

Hi - I've had an iPhone Xs with 256GB since 2019, and I've only used about 64GB so far (I have 1660 photos and 187 videos). I'm looking to upgrade to the iPhone 14 Pro, and I'm trying to decide if I should stick with 256GB or go to 512GB. I don't do gaming - but I take lots of photos and videos. I'm very good about deleting unneeded items as well. But if the photos and videos will take up more space because of the new camera, I want to make sure I don't run out of space. I do NOT use iCloud. And finally, I'd like to keep the new phone for quite a few years, if possible. Appreciate input on the appropriate storage (since it's $200 more for 512GB) - and how quickly your storage is being used if you have the iPhone 14 Pro. Thank you!
