My Apple Watch 8 does not record Sleep data. All solutions told me to edit Data Sources but Health app does not have any Edit to tap on (and to select Sleep).
My OS is updated, battery is charged and the watch is paired with my iPhone, it records and forwards for example step data.

Let's look into this together. To start, on your paired iPhone do you have bedtime set up? That schedule can help with sleep tracking. Details about setting that up as well as getting Sleep communicating between your iPhone and Apple Watch can be found at Track your sleep on Apple Watch and use Sleep on iPhone - Apple Support
If you paired your Apple Watch after completing Sleep setup, you can still turn on Track Sleep with Apple Watch. In the Watch app on your iPhone, tap the My Watch tab, then tap Sleep. Then tap Track Sleep with Apple Watch to turn on this setting.
