The constraint is actually the software versions of iPhone and the Apple Watch. iPhone 11 can run the latest iOS so no problem there.

iPhone 11 should be compatible with WatchOS 9 on any of the Apple Watches currently offered by Apple. Many of the older models back to iPhone 4 can also support the latest WatchOS versions so they should also be compatible.

If you scroll down in Apple's web page watchOS 9 - Apple you will find this note about compatibility;

watchOS 9 requires iPhone 8 or later with iOS 16 or

later and one of the following Apple Watch models:

      • Apple Watch Series 4
      • Apple Watch Series 5
      • Apple Watch SE
      • Apple Watch Series 6
      • Apple Watch Series 7
      • Apple Watch Series 8
      • Apple Watch Ultra

Thank you all!! I couldn’t find any information on apples website. Didn’t want to buy one and it wouldn’t work.

Hopefully you will be able to go for a shiny new Apple Watch 8 which will give you the best experience available today.

I will simply add a caution about buying pre-owned older models, particularly anything older than (about) Apple Watch 6. While the price might look tempting there are two real problems;

Older watches have seen several years of service, and in many cases will need battery replacement soon. That extra cost usually wipes out any potential saving and the original owner didn't upgrade without good reason.

There is -unfortunately- a market for stolen devices which turn out to be Activation Locked and totally unusable. We see many cases every week here in the Apple Support Communities, where the unsuspecting buyer has been scammed, and the seller of a locked device has disappeared without trace.
