What do I do if I don’t have a computer and I have an iPhone 5 and a 6 plus that are refusing to update in the App Store or manually through Settings? all of my apps quit working too. Or most of them anyway.

Neither of those iPhones can be updated beyond iOS 12.5.7
You will need a newer model iPhone to update to iOS 15/16
The apps that are not working on your iPhone 6 Plus is because those apps probably need iOS version 13 or newer to run.
