I've never seen the internal temperature of my iPhone. Is this something which was available in iOS 15 as it's not available in iOS 16?

Hmm, that was from my notes, but could be very for a much earlier version of iOS. I did a quick check thru my iPhone's collected analytic data, and also, did not find any clear items that refer to temperatures. This is with a 3rd gen. iPhone SE, running iOS 16.
... so it does appear that the only available option is via a third party app, like Coconut Battery, as you pointed out.

To my knowledge, iPhone has never reported its internal temperature anywhere. If the OP wants to know the temperature of their iPhone, I suppose they could buy a device which measures thermal temperature.

I’m sure that it’s recorded somewhere in the diagnostics. I’ve been able to get real time temperature using coconutBattery on a Mac. Like this from their front page.
