iPhone image quality

Hi everyone. Since having newer iPhones maybe from 11 I struggle with getting the perfect picture. Although the image quality is better, the image colour is not better than older versions, I use both iPhone 14, and iPhone XS. The image quality is obviously better on the newer phone, but the colours have never been as good as the old (XS in this case). Also when you take a picture on my 14 pro, the colour looks great when you first take it and view it, and then sets differently less than a second after, you can see this transition happen. I’ve checked that my settings match as much as they can with my XS. Even looking at the screen of the new iPhone 14 it’s more yellowish than XS - and when taking a picture of something white on both phones the 14 is more yellow, I airdropped an image to my XS to check it wasn’t the screen giving that illusion but it wasn’t.
