What can I do if the activity and Workout app are not opening anymore on the Apple Watch SE 44mm (I’ve already reseted it and started it as a new watch two times and the privacy settings are correct, but even though both apps are not opening on the watch)

I've had already done the “restart/unpair/erase/set up as new” sequence before posting the question.
In fact, the same problem has occurred two weeks ago, but after setting it up as a new Apple Watch at that point in time, both apps started to work again.
But this time even setting it up as a new Watch is not working to make Activity and Workout apps to function.
I've scheduled a Genius Bar support meeting, and lets see what they say.

Yes. Everything was working fine until last Friday. But Saturday both apps simple stopped to open on the Apple Watch (on the iPhone a can still access all data)
