I have the same question. Now all book keeping programs are moving to monthly subscriptions online. I'm not a fan of this for my small business. But, I still need double entry book keeping. I would be interested to develop a good accounting system in numbers in collaboration with others where different pieces of the puzzle could be created among many people
My advice would be to avoid trying to construct an accounting system in a spreadsheet program like Numbers.
Use a tool suited to that job.
If you have to pay, you have to pay. That will be less expensive than all the time you would have to put into trying to reconstruct a system that probably would be unreliable and hard to maintain.

If you are using a Mac, you could look at GnuCash which supports double-entry: https://www.gnucash.org/. This software is free and open-source.
I empathize with you. I have paid-for apps that are years old and I still use them. It would have cost me at least 10 times more if they had been subscription-based. There is one app-store app I use a couple of times a year that is subscription-based. I buy a subscription (one month), use the app, then cancel my subscription until the next time I need it. It does what I need but it ticks me off having to "buy" it over and over.
