Can I use different settings on my two apple watches?

I have 2 apple watches. My older one i use at night and want 'always on display' set to off. For my Ultra which I use during the day I want the switch to be 'on'. Can I set up 2 different profiles or set it up in a way that I don't have to manually change this setting twice a day?

The Always On feature should be independent on each watch. You can learn how to access those settings here: Use the Always On feature with your Apple Watch - Apple Support


Also, keep in mind, if you use Sleep on the watch it will automatically turn off your Always On display during sleep hours. You can learn more about that here: Track your sleep with Apple Watch - Apple Support
